Does artisan pasta have to be handmade?
No. Artisan has no single universal production definition. Ask which operations are manual, what equipment is used and how the producer controls batches. A small extruder and a skilled operator can be part of an artisan workshop.
Is semolina the same as ordinary wheat flour?
Not necessarily. Pasta semolina is commonly milled from durum wheat and has a different particle profile from many soft-wheat flours. Check the supplier specification rather than relying on appearance. Our dough guide explains the practical differences.
Does tipo 00 mean high-protein pasta flour?
No. Tipo 00 is an Italian flour classification associated with refinement and ash limits. It does not by itself specify protein strength or suitability for a particular pasta.
What does a bronze die change?
Bronze dies commonly produce a more textured surface than suitable low-friction inserts. Overall quality still depends on dough, die condition, forming and drying. See the shaping comparison before treating one material as a quality guarantee.
Is slow-dried pasta always better?
No. Time alone is not a quality or safety measure. Temperature, humidity, airflow, shape and validated release criteria must be considered together. A useful producer explanation goes beyond a number of hours.
Can fresh pasta be stored at room temperature?
Do not assume it can. Follow the producer’s storage instructions. Fresh and filled products need product-specific time and temperature controls; surface drying does not establish shelf stability.
Is drying a guaranteed pathogen kill step?
No. A drying process must not be assumed to provide a validated pathogen reduction. Hygienic production and product-specific hazard controls remain necessary. The drying guide distinguishes stability from a validated treatment.
Why does pasta crack after drying?
Uneven moisture removal can create stress, but dough, wall thickness, loading and subsequent handling may also contribute. Compare complete batch records before changing a cycle.
What should I ask during a workshop visit?
Ask how ingredients are chosen, which steps are controlled, how equipment is cleaned and how finished product is released. Follow visitor hygiene rules and arrange access in advance. Our publication does not operate a visitor facility or book tours.
Can this website validate my commercial process?
No. It provides general editorial information, not facility approval, a validated recipe or a food-safety plan. Consult competent professionals and the relevant authority. The facility guide links to useful starting references.
